YES YES YES !!! After all this time (litteraly *years* have passed) I have finally got it all working. As you may have read in a previous post , a friend of mine came over to help with the construction and soldering issues. In the end I wrecked 2 old gamepads to no avail .. After seeing an online video, I learned about a little box called the 'IPAC' which can be used instead of fiddling around with the internals of gamepads. You can see the IPAC on the picture here, it's just a little controller board with lots and lots of inputs. Connect all the wires that are on the inside of the cabinet's controllers and you are good to go.  It's currently only configured to run MAME games, but eventually it will run every game ever that existed on any system before 1995. So I'll have to setup emulators for Atari, C64, NES, Sega .. etc etc etc. Obviously those are all just extras as the most important thing is the arcade 'coin up' games, and they are all installed and fully working. You can check out this video I made to see the final result. As mentioned in the video, I will make another vid to show the cab when it's all superpimpalicious with LEDs and stuff.
